I have to say, this is a close rival to the cooked version, even my 13 year-old gobbled it up! I wasn't sure if I would be a fan of the raw cream cheese and cheddar sauce (since I love to eat the original versions) but I was pleasantly surprised!<br />
I made everything the night before, letting the veggies marinate. The next day I was all set for quick and easy lunch.<br />

<li><b></b>Adjust oven rack to middle
position and heat oven to 350 degrees. Grease 18 by 13-inch rimmed
baking sheet, line with parchment paper, and grease parchment. Whisk
flour, baking powder, baking soda, cinnamon, nutmeg, salt, and cloves
together in large bowl.

<li><b></b>Whisk sugar, oil, eggs, and vanilla
together until mixture is smooth. Stir in carrots and currants. Add
flour mixture and fold with rubber spatula until mixture is just
combined.

<li><b></b>Transfer batter to prepared baking sheet
and smooth surface with offset spatula. Bake until center of cake is
firm to touch, 15 to 18 minutes. Cool in pan on wire rack for 5 minutes.
Invert cake onto wire rack (do not remove parchment) and then reinvert
onto second wire rack. Cool cake completely, about 30 minutes. </li>

FROSTING<br />
<ol class="recipe_instructions" itemprop="instructions">
<li><b></b>Place 6 by 8-inch cardboard rectangle on cake
turntable or plate. Place 1 cake rectangle, parchment side up, on
cardboard and carefully remove parchment. Using offset spatula, spread
2/3 cup frosting evenly over cake layer. Repeat with two more layers of
cake, frosting each layer with 2/3 cup frosting and pressing gently on
each layer to level. Place last rectangle of cake on top and frost top
of cake with 1 cup frosting. Use remaining frosting to coat sides of
cake. (It’s fine if some crumbs show through frosting on sides, but if
you go back to smooth top of cake, be sure that spatula is free of
crumbs.)

<li><b></b> Hold cake with 1 hand and gently press chopped pecans onto sides with other hand. Chill for at least 1 hour before serving.

Here is my first RAW “un-cooking” experience! <i>Chocolate Brownies with Chocolate Ganache Frosting</i>.</div>

I first started with the ganache frosting since that had to slightly melt.<br />
You combine 1/2 coconut oil, 1/2 cup raw cacao powder, and 2 table spoons of raw agave (my question is can agave actually be “raw”? Since i’ve seen it on multiple “raw” sites, i’m assuming, yes?). Place ingredients in a bowl & place over a pan of hot water, the warmth from the hot water will eventually melt the oil. Stir to combine.<br />

Next, combine 1 cup raw walnuts, 1 cup raw pecans, and 1 cup dates in a food processor (i used my vita-mix which worked, but maybe processed it too much). Pulse a few times and then add in 1/2 cup raw cacao powder, pulse more until mixture is combined. {optional-add in some raw cacao nibs for added crunch}.<br />

My pan was much larger than I need, but it worked fine. Just form into a square shape & chill in freezer or refrigerator for about 20 mins. Frost with ganache & top with crushed sea salt {optional}. return to refrigerator.<br />

A few weeks ago I attended The Martha Stewart Show with my client Nirmala Nardine of <a href="http://www.nirmalaskitchen.com/">NIRMALA'S KITCHEN.</a> Nirmala, pictured with Martha, made a Moroccan Chicken Tagine that looked amazing & the smelled delicious! <br />
I just now got around to making it myself and all I have to say is yummy!<br />

Having my kitchen stocked with all of Nirmala's spices made this a quick & easy dinner. The only thing I did different was to omit the cranberries. This way I could view a little of each one, or at least feel that they were represented. <span style="font-size: xx-small;">Makes 25 to 30 sandwich cookies</span><br />
<br />
<b><u>For the chocolate wafers:</u></b><br />
1 1/4 cups all-purpose flour<br />
1/2 cup unsweetened Dutch process cocoa {i used <span style="color: #38761d;">Equal Exchange Organic Baking Coca</span>}<br />
1 teaspoon baking soda<br />
1/4 teaspoon baking powder<br />
1/4 teaspoon salt<br />
1 cup sugar <br />
1/2 cup plus 2 tablespoons (1 1/4 sticks) room-temperature, unsalted butter<br />
1 large egg<br />
<br />
<b><u>For the filling:</u></b><br />
1/4 cup (1/2 stick) room-temperature, unsalted butter<br />
1/4 cup vegetable shortening {i used <span style="color: #38761d;">Spectrum Organic Veg. Shorting</span>}<br />
2 cups sifted confectioners’ sugar<br />
2 teaspoons vanilla extract <br />
<ol><li>Set two racks in the middle of the oven. Preheat to 375°F.</li>
<li>In a food processor, or bowl of an electric mixer, thoroughly mix the flour, cocoa, baking soda and powder, salt, and sugar. While pulsing, or on low speed, add the butter, and then the egg. Continue processing or mixing until dough comes together in a mass.</li>
<li>Take rounded teaspoons of batter and place on a parchment paper-lined baking sheet approximately two inches apart. With moistened hands, slightly flatten the dough. Bake for 9 minutes, rotating once for even baking. Set baking sheets on a rack to cool.</li>
<li>To make the cream, place butter and shortening in a mixing bowl, and at low speed, gradually beat in the sugar and vanilla. Turn the mixer on high and beat for 2 to 3 minutes until filling is light and fluffy.</li>
<li>To assemble the cookies, in a pastry bag with a 1/2 inch, round tip, pipe teaspoon-size blobs of cream into the center of one cookie. Place another cookie, equal in size to the first, on top of the cream. Lightly press, to work the filling evenly to the outsides of the cookie. Continue this process until all the cookies have been sandwiched with cream. Dunk generously in a large glass of milk.</li>

<li class="step">Mix flour, confectioners' sugar, and a pinch of salt to combine. Add butter, and with a pastry cutter, work until the mixture resembles coarse meal. Add cold water, 1 tablespoon at a time, until a dough forms.</li>
<li class="step">Cut dough in half; shape each half into a disk. Wrap in plastic wrap; refrigerate at least 30 minutes, or up to 1 day. Cut 1 disk into 12 pieces; on a lightly floured work surface, flatten each piece into a 2-inch round. Press a round onto bottom and up sides of each cup of a 12-cup nonstick mini-muffin tin. Repeat with remaining disk of dough and second muffin tin. Refrigerate 30 minutes.<b> OR</b>- to make the process quicker use a melon scoop an scoop dough onto a cookie sheet & put in freeze for about 5mins. Place ball in mini muffin tin and press with wooden tart maker.</li>
<li class="step">Preheat oven to 400 degrees. Stir together granulated sugar, cornstarch, lemon juice, vanilla and a pinch of salt in a medium bowl. Add berries; toss to coat. Fill shells with berry mixture. Bake until crusts are brown and filling is bubbling, about 25 minutes. Let cool slightly in tins. Run a knife around tarts; remove from tins. Let cool completely on rack. </li>

{I want to give myself a disclaimer on the photos and cake decorating. With the limited time I had on this baking project, decorating was a "quickie" and the photos were shot super-fast with my iphone}. <br />

This recipe, taken directly from the "Whisk Kid" blog, was PERFECT!!<br />
I was amazed how evenly and flat each layer baked and the flavor was delicately textured. The only adjustment I made to the cake was decreasing the amount of food-coloring {for a slightly more natural look}.<br />

For the frosting, I followed the the recipe for the "fill and crumb coat" but I used a lighter frosting on the outside.<br />

I baked the cake in the evening and refrigerated it over-night. The frosting hardened, making it the perfect surface for a final frost. While I'm a big fan of "it's best the day you bake it", in this case after bringing it to room temperature it still tasted perfect.<br />

For the outside frosting I wanted to use something lighter, a little more fluff and a little less butter. This helped to balance the richness of the buttery frosting on the inside, but with the warm weather of the day, the frosting started to melt before we cut-into the cake. Minor miss-hap, but something to consider.<br />

I'm adding a disclaimer here: THERE IS A LOT OF FROSTING/BUTTER IN THIS CAKE. I used a lot because I wanted the cake to be very striking visually. It is intentional. Put in less if you want. Also, I'm not forcing you to eat this entire cake by yourself, so - seriously - quit freaking out about the butter. <br />
<br />
<b>White Cake (but not really)</b><br />
I made things difficult on myself and altered a coconut cake recipe for this. I don't know why I didn't just make a white cake from a white cake recipe, but.... I didn't. <a href="http://tendercrumb.blogspot.com/2009/02/southern-coconut-cake-cake-slice.html">Here's the source</a> if you're looking to make a coconut cake. It looks divine, but my friends don't like coconut :( <br />
2 sticks (226 g) butter, room temp<br />
2 1/3 c (466 g) sugar<br />
5 egg whites, room temp<br />
2 teaspoons vanilla<br />
3 c (375 g) flour<br />
4 tsp baking powder<br />
½ tsp salt<br />
1 1/2 c (355 g) milk, warmed for 30 sec in microwave to bring to room temp<br />
Red, orange, yellow, green, blue and purple GEL food coloring. Liquid will not be vibrant enough!<br />
<br />
Preheat the oven to 350F degrees. Oil and line how ever many 9” cake pans you have (I have three and I just reused them). <br />
<br />
Sift together the flour, baking powder and salt. Set aside.<br />
<br />
Cream the sugar and butter, then add the egg whites (I cracked them all into one bowl) and add them a little at a time. Add the vanilla and mix until fully incorporated. Then, alternating between wet and dry, add the milk and flour mixture in two parts.<br />
<br />
Divide the batter amongst 6 bowls (I did it by weight. Weigh your mixing bowl before you begin adding ingredients and then subtract the weight of the bowl from the final measurement after the batter is completed. Divide that number by six and add that weight of batter to each bowl), and then whisk a fair amount of the appropriate food color into each bowl. Keep in mind that the color of the unbaked batter will be the color of the baked batter. Pour into the pans and bake for 15 minutes each. <br />
<br />
When you remove them from the oven, let them rest on the cooling rack, in the pan, for ten minutes. Then flip, cover, and stash them in the fridge to cool quickly. <b></b><br />
<br />
To fill and crumb coat:<br />
9 egg whites<br />
1 ¾ c (350 g) sugar<br />
4 sticks (532 g) of butter, room temp<br />
2 tsp lemon extract<br />
<br />
To frost:<br />
5 egg whites<br />
1 c (200 g) sugar<br />
2 sticks (226 g) butter, room temp<br />
1 tsp lemon extract<br />
<br />
Cook the egg whites and sugar in a small saucepan over medium heat, whisking constantly, until the sugar is completely dissolved (test by rubbing some between your fingers. If it's completely smooth, it's done). Pour into another bowl (a stand mixer is preferable) and whip on high speed until room temp. Then, on a medium-slow speed, add the butter, waiting until each piece is completely incorporated before adding the next. After all the butter has been added, turn the mixer back to high speed and whip until it has come together, about five minutes. Add the extract, beat briefly and then use.<br />
<br />
If the buttercream seems soupy after all of the butter is added and does not come together after whipping, refrigerate for 5 to 7 minutes and continue whipping until it becomes fluffy and workable.<br />
<br />
<b>Assembly</b><br />
Stack the layers in your preferred order and fill and frost as you would any other cake. <br />
<br />
Once frosted, the cake can be left on the counter without any problems, but feel free to refrigerate it. </ul></div><div class="print-directions recipe-section"> <h2>Directions</h2><ol><li class="step">Preheat oven to 325 degrees. Butter a 9-inch round cake pan. Line bottom with parchment cut to fit, and butter parchment. Dust with flour, and tap out excess. </li>
<li class="step">Combine sour cream, vanilla, zest, and juice. In a separate bowl, whisk flour, baking powder, baking soda, and salt. </li>
<li class="step">Beat butter and sugar with a mixer on medium-high speed until pale and fluffy. Add eggs and whites, 1 at a time, beating well after each addition. Beat in sour cream mixture. Reduce speed to low, and beat in flour mixture until just combined. Transfer to pan, and smooth top. </li>
<li class="step">Bake until a toothpick comes out clean, 40 to 45 minutes. Let cool in pan on a wire rack for 5 minutes, then turn out cake onto rack to cool completely. (Cake can be stored in an airtight container at room temperature overnight.) Before serving, dust with confectioners' sugar, and arrange flowers on top. </li>

I thought for sure the kids would go crazy over the super-sugary crumb topping of the coffee cake, but the big hit was the blueberry muffins! Both the coffee cake & blueberry recipes are from Martha Stewart. The blueberry muffins had a wonderful dense sweet flavor. I used frozen organic-wild blueberries, they were perfect!<br />

The spelt/agave sweetened wild-blueberry scones i made (but not pictured) were adapted from a BabyCakes recipe. <a href="http://figandsage.blogspot.com/2010/03/gluten-free-vegan-raspberry-scone.html">Fig & Sage blog</a> has posted the recipe, check-it-out. The only substitutions I made were the blueberries & I used organic <i>white</i> spelt flour. What the recipe doesn't mention, but I always do, is slightly melt the coconut oil. These scones are always a hit with the parents & my kids love them too. If you're watching your sugar intake, or want to try a healthier alternative to white flour, the BabyCakes spelt scones are a must!!!<br />

I wanted space between the art & glass to show the uneven edges and the depth of texture. But, for now it's going in a basic black frame wedged against the glass {I had this extra frame from a "buy-one, get-one free" sale} . For now this will do. On the up-side, the black creates a nice contrast to the vivid colors.<br />

<li class="plaincharacterwrap"> 1 cup white sugar</li>

<div class="directions" style="margin-top: 10px;"> <div class="separator" style="clear: both; text-align: center;"></div><ol><li><span class="plaincharacterwrap break"> Preheat oven to 350 degrees F(175 degrees C). Butter the bottoms and sides of a 9x13 inch pan. </span></li>
<li><span class="plaincharacterwrap break"> Chop nuts and toss with cinnamon. Set aside. Unroll phyllo dough. Cut whole stack in half to fit pan. Cover phyllo with a dampened cloth to keep from drying out as you work. Place two sheets of dough in pan, butter thoroughly. Repeat until you have 8 sheets layered. Sprinkle 2 - 3 tablespoons of nut mixture on top. Top with two sheets of dough, butter, nuts, layering as you go. The top layer should be about 6 - 8 sheets deep. </span></li>
<li><span class="plaincharacterwrap break"> Using a sharp knife cut into diamond or square shapes all the way to the bottom of the pan. You may cut into 4 long rows the make diagonal cuts. Bake for about 50 minutes until baklava is golden and crisp. </span></li>
<li><span class="plaincharacterwrap break"> Make sauce while baklava is baking. Boil sugar and water until sugar is melted. Add vanilla and honey. Simmer for about 20 minutes. </span></li>
<li><span class="plaincharacterwrap break"> Remove baklava from oven and immediately spoon sauce over it. Let cool. Serve in cupcake papers. This freezes well. Leave it uncovered as it gets soggy if it is wrapped up. </span></li>

I roughly cut some burlap and used the frayed strings to to tie it together. After weaving the burlap strings through to hold it, I weaved some red silk tread to add a little contrast and color.<br />

Not only did the kids love the taste, it was fast, easy, and fun to watch it cooking!<br />
It grows big and fluffy & then deflates like a balloon. I like that all of those eggs add a lot of protein, but for the kids it taste just like dessert.<br />

I stumbled across this logo comp I designed for a Waldorf School fundraiser a few years ago. The logo would be used to advertise their Pro-Am Golf Tournament fundraiser. While I never thought I'd use Snell Roundhand for anything (let alone a logo), I kinda like it. But at the same time, I kinda don't.
